Our current Cookbook of the Moment is ‘One: Pot, Pan, Planet by Anna Jones’.

Our cookbook of the moment is a way to bring our departments together and showcase some of our best products. By using a cookbook from our bookshop and ingredients from our deli, our cafe & kitchen team bring it all together to make delicious lunches for our customers. 

Our current Cookbook of the Moment is one that fits right into our ethos here at Mainstreet. This book is all about reducing food waste and trying to be more sustainable in the kitchen. Anna Jones, as well as providing lots of brilliant recipes, gives us many helpful tips on how to combat waste and the usage of energy in the kitchen.

We believe that we should all be a little more conscious of the footprints we are leaving behind on this planet. This cookbook makes you think about this and is a perfect companion to have when making use of all of the left-over ingredients in the pantry. Our kitchen team use this book for inspiration on a regular basis, helping to find new recipes that use vegetables that maybe did not get used as planned or to simply make sure there are always vegetarian/vegan options on our menu. 

Some of our favourite recipes to take inspiration from are the Lemon, Tomato & Cardamom Dhal and the Carrot Soup with Tahini and Rosemary. The cookbook likes to use seasonal ingredients and we always use our local suppliers where possible. As Jones says ‘I encourage you to buy the best food you can from farmers who care”.  From our local veg man, the Borders Berries farm down the road and our artisanal British cheeses from farmers around the country, we try to be as mindful as possible when choosing our suppliers. There is a joy in knowing each of our suppliers’ stories and being able to support them.
